In September, the fields and roadsides of the Great Plains erupt in a blaze of yellow as the sunflowers make their presence known to the local pollinating insects. The seeds of sunflower can be eaten raw or cooked. Rich in fats, the seed can be ground into a powder, made into sunflower butter or used to make seed yoghurt. When mixed with cereal flours, it makes a nutritious bread. Lewis and Clark made mention in their journals of its usage by the Plains Indians.
The sunflower can be found in the following states: all U.S. States except Alaska, Maryland and Virginia.
